I have an interview next week for a job as a Performance Testing Engineer. What are some questions that I should plan on answering during the interview?

There are many questions you should be prepared for in your interview, for a Performance Testing Engineer. One of the very basic ones that could be asked is "What is Performance Testing?". Another one is "Name a few types of Performance Testing". Be prepared for lots of technical questions.
