I'm working on SEO in Yoast. I am pretty new to this, how do I force rewrite titles with Yoast? I have the free version, if it helps any. Am I missing something obvious?

You aren't missing anything. You just need to go to Yoast SEO then select Search Appearance. There you will find a tab named General. You can force rewrite titles here.
