What is port 25565 used for? A guide said that I have to open it for a server.

Seems like that port is most commonly/mainly used for Minecraft servers.

You should be able to run a Minecraft server from any port (probably). The Minecraft developers probably chose that port because it wasn't commonly used for anything else and wanted to choose a standard port that everyone could use for their servers without running into port conflicts.

You should be able to open port 25565 the same as any other port.
