I am working on a large spreadsheet in excel and would like to save a copy that has everythign rounded to the nearest 5. Could you help me figure out how to do that?

For rounding numbers to the nearest 5, you can use the formula =MROUND(number,5)

Let's take an example that in cell B contains number 17 in Row 6 and you want to round it to nearest 5. So, Put the formula =MROUND(B6,5) in Cell C.

The value in B6 is 17 and the result will be 15 since 15 is the nearest multiple of 5 to 17.
