Full Error:

{
	"name":             "AUTHORIZATION_ERROR",
	"message":          "Authorization error occurred.",
	"information_link": "https://developer.paypal.com/docs/api/invoicing/#errors",
	"debug_id":         "fc6bb798f2970"
}

The issue was that after creating the REST app here:

I had changed the email address from a former business to the currently (for 256kilobytes.com). The email address for your sandbox app must be the same as the one listed under "sandbox account" for your app.

Also, note than an AUTHORIZATION_ERROR is different from an AUTHENTICATION_ERROR.
